People welcome Adra a blissful festival in Bihar with dalpuri, rice kheer and mango.
Adra or adr mean humidity. People belive that when the Adra comes the hotness of summer decreases and its becomes like start raining.
This way Adra Nakshatra not only bring moisture (rain) in the environment as it’s name suggests but also it helps to re-start farming after summer season. For good crops in field good rain is necessary.
Traditionaly people thought that through this festival God give them prosperity. Dal puri without salt and rice kheer with mango is offered to God.
“Dudh-dahi ki nadiya bahti rahe”.
This is very tasty and healthy Dal Puri made with very little ingredients and very easy to make.
INGREDIENTS
Whole wheat flour – 2 cup
Salt – ¼ Teaspoon (to taste)
Oil or melted ghee – For fry
Water – 1 Cup
For Stuffing
Chana dal ( Bengal Gram) – 1 cup
Cumin/Jeera seeds -1 Teaspoon
Red chilli powder -1 Teaspoon
Gram masala -1/2 Teaspoon
Salt – 1 Teaspoon
Water -1/2 cup (if required)
METHOD
- Firstly making the dal stuffing. Take a pressure cooker add chana dal with 1 glass water for 2-3 whistles to get easily mashed.
- Do not overcook, cool and drain all water.
- Heat a kadai with little oil. Add cumin Seeds, turmeric powder, red chilli powder and salt in low flame. Then add boil chana dal mix well low flame. Cook for 3-4mint.
- Now add garam masala at this stage and turn off the flame. While mixing mash it with the help of spoon or potato masher .
- Take a bowl add whole wheat flour and little salt as stuffing also have salt.
- Add little water at a time or it will take approx. 1 cup water to make a dough. Cover it and keep a side for 15 minutes.
- Heat oil in a kadai to fry the dal puris. Make small balls of the dough. Take a ball and flattern with hands, stuff ½ tablespoon chana dal stuffing in the centre and close it carefully seal the edges of dough.
- Now roll out the puri about 3-4 inches and put the puri in hot oil. Fry them on medium high flame till they turn golden brown in colour from both side.
- Take it out on paper towel to drain extra oil.
Serve this hot chana dal puris with sweet rice kheer and mango.
Note
- For make whole wheat dough we need appox 1 cup water for 2 cups wheat flour, ratio is 1:2.
- Add little water at a time, to make soft and perfect dough.
- After stuffing carefully seal the edges of dough otherwise it will crack and the puri will fill with oil.
- You can also add a pinch of hing and green coriander leaves(hara dhania) according to your taste.
