A delicious yummy recipe. The name shahi stand for royal and tukda means piece.  As this is traditionally made with milk, ghee and lot of nuts, it is high in calories, taste and aroma. This recipe originated in Mughal time. In month of Ramadan this is special dish for Iftar.

 When you want to eat sometime sweet, go for this Shahi Tukda is very similar with Double ka Meetha. This easily homemade recipe is a delightful treat for everyone.

As festivals are coming and salary are decreasing day by day. So, I try to make this budget friendly shahi tukda recipe with same flavour and aroma.

Must try this quick and tasty recipe.

INGREDIENTS:

Bread                         5 slices

Ghee                           1/2 cup for fry

Full cream milk          1/2 liter

Sugar                           1/4 cup

Milk                              1/4 cup

Cardamom    powder   1/2 teaspoon

Cashews nuts               2 tablespoon chopped

MATHOD:

  1. Take a kadai add milk and boil on high flame. Once it boiled lower the flame.     
  2. In a mixture grinder take 2 slices of bread cut into small pieces and grind them into fine powder.
  3. Now add this bread powder into boiling milk and stir continuously in low flame.
  4. In a bowl take milk powder add 2 tablespoon water mix well so, there is no lumps in it.
  5. Add this milk powder and water mixture in the boiling milk and stir well from the bottom to avoid to burn.
  6. Now add sugar and cardamom powder, cook till the sugar dissolve and the mixture get little thick turn off the flame and keep aside.
  7. Take left bread slices and cut into 4 pieces.
  8. Take a deep pan or kadia put ghee and heat. When ghee melted then put the bread in hot ghee and fry them till it golden brown in colour and crisp.
  9. Drain the extra ghee and put them aside.
  10. Now its time for plating, take a serving plate, put rabri then put 4 pieces of fried bread on rabri and garnish with some chopped cashew nuts. You can used any nuts or dry fruits for garnishing this shahi tukda.

Note:

  1. When you make rabri, flame should be low otherwise the milk will burn from bottom, the smell and taste both are not good.
  2. Continuously keep stirring the milk while cooking it will prevent for sticking in bottom of the kadai.
  3. This is budget friend, so I add bread and milk powder to give a rich taste to this rabri recipe.
  4. You can go with traditional method by burning one liter milk, it will take more time as well as cost  also.
  5. White bread is good for this recipe it give best taste and aroma. You can make this with brown bread also but it is not too tasty as white bread.
  6. Keep the bread in air for one hour or a day. This is important tips. By using this tips you can avoid soaking od too much ghee while frying.
  7. If you like to eat more sweet in taste then dipped this cripy shahi tukda into sugar syrup.
  8. You can also add saffron into milk and garnish with mawa and any nuts of choice.
  9. If you are calories conscious person then eat very small piece as it is high in calories.
  10. You can also use grill or toast with little ghee on a pan to make crispy and golden brown in colour.
