
Samosa are very popular Indian snack. People of all age love to eat samosa. I am also a big fan of samosa.
But do you know that samosa was not invented in India. Yes that is true, our favourite samosa actually originated in Central Asia and called as Samsa. Its travel long way and was introduced in 13th or 14th century. Amir Khusro (1253-1325) a scholar and royal poet of Delhi sultanate wrote in around 1300 “samosa prepared from meat, ghee, onion and so on.” But the vegetarian samosa originated in Uttar Pradesh, India.
Today in the whole world samosa also prepared with little variation and diffusion of culture and regions.
In Bihar, Jharkhand, Bengal and Odisha it named as singara. This popular snacks are very easy to make with little trick in folding.
I always enjoy singara /samosa with my favourite green tangy and chilli mint-coriander (dhaniya Pudina) chutney.
The taste of singaras are different from traditional samosa. Singaras are served hot in chaat with boil yellow peas, curd, chopped onion, coriander and chaat masala.
Must try this traditional singara recipe. You really love it.
Ingredients
Whole wheat flour -1 cup
Ajwain -1 Tsp(crushed)
Suji -1 Tbsp
Oil – For fry
Salt -3/4 Tsp
For Stuffing
Potato -4-5 (Boiled and mashed)
Ginger and green chilli paste -1 Tsp
Garlic paste – 2Tsp
Methi seeds -1/2 Tsp
Jeera /Cumin seed -1/2 Tsp
Bay leaf 1
Red chilli 1
Turmeric powder -1/2 Tsp
Salt – 1Tsp
Green coriander/dhaniya – 2 Tbsp ( chopped)
Roasted peanut – 3 Tbsp
For Chaat
Yellow peas – 1 Cup (boiled)
Onion -1 Small (fine chopped)
Curd – ½ Cup
Salt – ¼ Tsp
Chaat masala – ¼ Tsp
Method
- Take a kadai put 2 tsp oil and heat. Add methi and jeera seeds, split red chilli and bay leaf cook for few seconds.
- Now add ginger, garlic, green chilli paste, turmeric powder and salt cook for few minutes.
- Add boiled mashed potato and cook for 5 minutes without cover and stir it well.
- Add peanut and chopped green coriander and mix well.
- Now we make our dough. Take a bowl add whole wheat flour, suji, ajwain, salt and 2 tbsp oil mix well.
- Add water slowly as per required to make a dough like regular roti.
- Take a small amount of dough and roll with help of rolling pin. While rolling dust some wheat flour to roll.
- Roll it in big size and divide into two pieces.
- Take one piece and make a crown like shape and now fill the stuffing and seal it with the help of water.
- When you make all the singara/ samosa then heat a kadai put oil for fry.
- When oil is hot then put the samosa one by one. Fry it in medium heat till the singara turned golden brown in colour.
- Put out the singara in a paper napkin, so the extra oil absorbed by the paper napkin.
- Now it ready to serve hot with green chutney or tomato sauce as tea time snack.
For making singara/samosa chaat.
- Boil yellow pea with ¼ tsp of turmeric and salt.
- Take 2 singara in a plate, crushed it little, put cooked yellow peas.
- Add chopped onion and coriander leaf and sprinkle some chaat masala on it.
- This yummy samosa chaat is ready.
Note:
It serve 6 singara/ samosa. You must try this healthy whole wheat samosa for snack.
Traditional samosa made with flour/maida, but I want to make healthy snack. So, I used whole wheat instead of maida.
I never use refine oil as it is not good for our health. Try mustard oil, peanut oil, til oil or coconut oil this will increase the nutritional value of you food.
You can also bake this samosa in microwave or use air fire to make this oil free samosa.
With less ingredients this easy samosa recipe will make you happy and satisfied instead of grasping of junk food outside during this covid pandemic.
